Mom’s famous Christmas lunch starter serves 10 (because all 5 of us goes for seconds!!).
2 medium boiled potatoes
1 Tin Curry fish (225g)
25ml chopped parsley
10ml lemon juice
Chopped parsley for garnish
- Steam Stokvis until it’s done. Remove the skin and bones and pull apart with a fork.
- Boil the potatoes with skin until soft. Remove the skin and cut into small bite size cubes.
- Mash the curry fish. Add the Stokvis, potatoes, parsley, lemon juice and salt and mix together lightly.
Moms tip: its best served chilled so prepare it the night before and refrigerate until serving time.
Best enjoyed with and on a bed of lettuce.
